
I’m ashamed to say that I don’t really have a recipe this week. :/ BUT! I do have a tip. Did you know that you can make wonderfully baked potatoes in the crockpot? All you need is:
- Potatoes
- Olive oil
- salt
Clean your potatoes well, and poke a hole in the skin with a fork. Lightly brush with olive oil and place in the crockpot. Sprinkle a bit of salt on top, cover and cook for 8 hours on low. That’s it!
You can also make twice baked potatoes (which was our original plan, but it didn’t work out). After the 8 hours are up, take the potatoes out and let cool a bit. Cut in half and scoop out the flesh into a bowl. Mix in your preferred twice baked ingredients (we love butter, sour cream, and cheese), microwave for about a minute, then scoop it back into the potato skins. Place them back in the crockpot and cook for 25 more minutes. Top with bacon and chives, and there you are!
